Irritable bowel syndrome is one of the most common and perplexing conditions gastroenterologists treat. It affects an estimated 6 percent of people in the United States, with more women diagnosed than men, and causes symptoms so debilitating they can be hard to ignore, including abdominal pain, bloating, diarrhea and constipation. Scientists don’t know exactly what causes I.B.S., and there is no cure, so the condition is often difficult to manage. About 1,500 years ago, in the mountains of northern China, you might have found bamboo mats lined with slabs of tofu, resting in the snow overnight. Once frozen solid, “the structure and basic character of the tofu underwent a radical transformation,” William Shurtleff and Akiko Aoyagi wrote in “The Book of Tofu” (1975). Like the best of us, tofu is made up of mostly water. When that water turns to ice, then melts, it leaves behind what Mr. Shurtleff and Ms. Aoyagi called “a lacy but firm network.” This more compact, spongy form of tofu, it turns out, is especially great at becoming truly and unapologetically crisp — crunchy, even — in the oven.

It is considered "green" if produced with renewable energy and "gray" if the process is fueled with carbon-emitting natural gas. "When we get to the Gulf, (offshore wind) will start becoming much more disconnected from the grid," said Cheryl Stahl, principal project manager at risk assessment firm DNV. In comments to BOEM on the planned Gulf sale earlier this year, those three companies noted the potential of offshore wind to produce green hydrogen in the region. "The Gulf of Mexico is uniquely situated to facilitate and benefit from green hydrogen production via offshore wind," Shell said in April, pointing to the region's existing port and pipeline infrastructure as well as new federal funding for green hydrogen development. The American Clean Power Association, a trade group that represents offshore wind and other renewable energy developers, also said in its comments to BOEM that green hydrogen would "increase market viability of offshore wind."

William Friedkin, ‘Exorcist’ director, dead at 87

CNN —William Friedkin, director of iconic 1970s films including “The French Connection” and “The Exorcist,” has died, his wife Sherry Lansing, the former CEO of Paramount Pictures, told The Hollywood Reporter on Monday. Friedkin won the Oscar for best director for “French Connection” in 1972, going on to be nominated for the same trophy again two years later for occult horror “Exorcist,” the genre-defying hit that racked up ten nominations and two statuettes. Curiously, Friedkin once told Cinephilia Beyond that his original intention wasn’t even to make a horror film with “The Exorcist.”“I recognize that audiences for generations have considered it a horror film,” he observed. “I won’t deny that, but when I set out to make it, the writer and I never had any concept of it as a horror film. He is survived by his wife, along with two sons, Jackson and Cedric Friedkin.
